Favourite summer dessert

毎年この季節になったら作りたいお菓子—ルバーブ・スクエア。
見かけは赤いセロリのようなルバーブ、お菓子にするとすっぱさが甘さと合って、とってもあっさり。
バターの入ったパイ生地に、ざくざく切ったルバーブを並べて卵と砂糖とミルクを混ぜたものを流し込むだけ。簡単だけどおいしいよ。カナダに来て以来私のお気に入りのデザート。

Every year around Summertime, I make my favourite dessert – rhubarb squares!

Rhubarb, looks like long-red celery to me. Once cooked, it’s sour flavour comes through and the contrast to the sweetness of the dessert (believe it or not) makes for a delightfully light summery treat.

Spread chopped rhubarb on a buttery layer of crust and pour a mixture of eggs, sugar and milk over the rhubarb and crust. Then bake.
It’s sooooooooo easy to make, yet soooooooo delicious.
